Ingredients:
• 1 can of coconut milk
• 2 tsp. green curry paste
• 2 lime leaves
• 2 stalks of Thai basil
• 3 green chillies
• Diced chicken
• 1 cup of eggplant
• 2 tsp. sugar
• Salt to taste
Steps:
1.Cook spaghetti in a large pot of boiling
aside.
2.Saute green curry paste in oil until fragrant.
3.Reduce the heat and gradually add coconut milk (pour it in a little at a time). Stir until a film of green oil surfaces.
4.Add lime leaves and chillies and mix well.
5.Add chicken and stir occasionally.
6.Add a little bit more coconut milk, sugarand salt to taste.
7.Reduce heat to a simmer and cook for an additional 10 minutes.
8.Pour in cooked spagetthi and mix it all together.
